Salsa recipe that will hold you ’till dinner.

 One of the wonderful readers here at run4change is Mike.  He loves to hear about the different stuff I and others eat on the weight loss journey.  I told him that I loved to snack on salsa right when I get home to kind of hold me over until dinner time.  He told me that his wife makes the best salsa ever so I asked him for the recipe.  Kathy is the master mind behind this salsa. She tells me there that it is more than a recipe, it is a process that you make to your taste.
Ingredients that you will need.

1 Sweet Onion
2-3 limes
1-bunch Cilantro
2-Pasilla peppers
1- Jalapeno pepper
4-5 Tomatoes
Sea Salt, Pepper and some chopped garlic to taste. ( you will want to taste and add these ingredients a couple of times to get it the way that you want it.)

Place all of the peppers in a covered fry pan and simmer them turing them often to keep them from burning. (This is going to make your house smell great) When the skins of the peppers are starting to come off place them in a small paper bag while you prepare the other ingredients. (This will coninue to cook them in the bag so that the skin will come off easily)

Chop the onion into small pieces, chop the tomatoes, chop the top half of the Cilantro and comibine these ingredients. Add the lime juice to taste. (we usually all three) Add the spices and garlic to the mix.

Next cut the tops off the peppers and remove the seeds (careful of what you touch until you wash your hands because the seeds are where the heat is and it WILL burn a bit if you touch your eyes etc.) Most of the skin should come off easily and it is not a big deal if some is left.

Once you have done this combine the peppers with the rest of the mix and you are done. Very Fresh, Very good salsa. It will cost you a bit more than the bottled stuff but it is worth it. It will only keep for about 5 days tops so it is good that you cna’t keep the stuff around. At our house it is usually gone by the next day at lunch, even the big batches.

This will be a good sized batch. It is great on all meats, with chips and over veggies and potatoes and of course by itself straight from the bowl. ( We are stealing that tip.)

Also, pour a good amount into your scrambbled eggs and let it simmer. this is called Egg Chili.

    I am fired up that you posted the salsa recipe!!!!!! Trust me it’s fantastic and it fits into any healthy lifestyle and it can be a key componet to a weight loss journey.As a bonus it is fun to make as a couple or as a family or just as a treat for yourself.

    So now the key is that you have to make time to make it Jason. I know that you will love it. Jason do me the favor of making egg white scrambled eggs the next day. I promise that it is good enough to add as a fav.

    When cooking, as soon as the eggs are close to cooked add a big amount of fresh salsa to the eggs as they finish cooking and simmer on reduced heat. They will plump up a bit as they cook so don’t panic. After about 5 minutes pull them off the stove and they will return to normal size as they cool.

    For a big portion you have almost ZERO points (especially if you use that better n eggs stuff) and you will feel like you need to run like you stole something because it will taste that good. Add one of you Bagels or some good whole wheat toast with the spray butter and possibly some sugar free jam or even some good Tortillas and you are in business big time!!!!!! Very feeling and tasty and low points. A great way to start the day.

    My wife took a picture of the ingredients in true “My Angle on Weight Loss” Jason style and she wants to upload it to you to add to the post. The problem is we don’t know how. HELP!!!!!!!! I also want to add out picture for the contest but again I don’t know how.
